Fermentazione spontanea ad opera deilieviti indigeni presenti nelle bucce. La macerazione fermentazione si protrae per oltre 40 giorni. In questa fase le bucce cedono lentamente al vino il colore e gli aromi propri dello Zibibbo, durante la quale come una vinificazione in rosso si procede ai rimontaggi. Durante la lavorazione non si effettua alcuna correzione o aggiunta di additivi, si procede a lasciare il serbatoio scolmo nella fase ossidativa.
